Also known as summer truffle, this variety has a black or dark brown outer surface. It grows in both sandy and clay soils, in deciduous woods, pine forests and even in old olive groves. It is the most common truffle on Italian and especially Abruzzese soil, with a lower cost than other truffles precisely because of its easy adaptability to different types of habitats and plants on the territory including cultivated truffle grounds.
CHARACTERISTICS
It can reach considerable size and is very similar to the black truffle. The gleba of the Black Summer Truffle is characterized by an earthy, musky flavor, with slight sweetish notes that are also reflected in its aroma. The outer surface has brown pyramidal warts. It has an intense aromatic odor, but when cut it can be distinguished from fine black, because the gleba does not turn dark, but tends to a dark yellow.
USING
It is appreciated in the kitchen for its versatility and is used to enrich a wide range of dishes, from starters to desserts.
