CHEESEBURGERS WITH TRUFFLE AND MAYONNAISE

1) Put the meat in a bowl, add salt and pepper and mix with black truffle oil and black truffle powder.
2) Make 4 circular hamburgers 160gr each.
3) Take the onion and cut into julienne and cook it in a pan and deglaze a small glass of cognac.
4) Cook the burgers as your personal taste and add the cheddar.
5) Cut the bread and spread the black truffle paté inside, put the hamburger between the bun and complete with onion and mayonnaise on the top and serve.

Put all the ingredients in a glass and blend everything (medium speed) with an immersion blender. from the bottom upwards, until the compound will be well emulsified and yellowish reached the consistency of the mayonnaise.

FOR THE HAMBURGER (4 PIECES):
600g minced beef
30ml La Rustichella Truffle Oil
to taste salt and pepper
4 buns
80g La Rustichella Black Truffle Pate
4 slices of cheddar
80g mayonnaise
1 onion
1 small glass of cognac

FOR THE MAYONNAISE:
2 eggs
50g La Rustichella Black Truffle paté
25g La Rustichella Truffle Oil
300g sunflower oil
to taste salt and pepper
